The olives are immediately ground in granite stone mills before they are put into special bags. The bags are then piled up and the oil drains naturally by the paste's own weight. This precious juice, which is not thermally processed or hydro-pressed, is called Çiğ Yağ. This oil, which the producer usually keeps to himself, is as precious as breast milk thanks to its vitamins and nutritious value.
This highly aromatic olive oil is not filtered in order to preserve its natural essence.
